Heat waffle iron and coat lightly with oil. Pour in 1/2 cup batter and cook until browned. Keep warm and repeat with remaining batter. While the waffles cook, heat the oil in a skillet. Add the onion and carrots, and saute for 2 min. Add the seitan and sautee another 1 min. Add 3 tbsp of water. Cover and simmer for 7 min, adding more water if pan gets too dry.
