This is an amalgam of a recipe taken from the New York Times Website for "Fried Rice with Tofu and Broccoli" with the tofu preparation taken instead from "The Best Pan Fried Tofu" taken from food.com, and a few additional flavors that my "mind's tongue" saw fit (most importantly, fresh basil). It turned out very well for a first attempt at stir frying and cooking tofu!Make sure that the rice is already cooked before making this dish, I had to stick mine in the fridge an hour before stir frying and it was a little mushy. What Are The Ingredients For Vegetable Fried Rice with Pan Fried Tofu Recipe?The ingredients for Vegetable Fried Rice with Pan Fried Tofu are: For the Tofu:1 lb package of extra firm tofu cayenne pepper 1.5-3 tbsp canola or peanut oil salt For the Stir Fry: additional canola or peanut oil as needed 2-3 cloves Garlic, minced 1 tbsp minced Ginger Root 1 bunch Scallions, chopped 1 16 oz package frozen broccoli (thawed) or 1 bunch fresh broccoli 2 carrots, chopped 3 cups cooked rice (I used jasmine, which turned out well but other types work) 2 large Eggs 2 tbsp Soy Sauce 1/4 - 1/2 cup fresh basil leaves, coarsely chopped How Do I Make Vegetable Fried Rice with Pan Fried Tofu?Here is how you make Vegetable Fried Rice with Pan Fried Tofu: Broccoli:1) If using fresh broccoli, steam the broccoli for four minutes until just tender, or blanch in salted boiling water for two to three minutes. Drain, rinse with cold water and set aside.2) Frozen broccoli will turn out mushier but tastes okay. I made sure the package was thawed.3) If desired, toss the broccoli with 2 tsp of soy sauce.4) Set aside5) Beat the eggs and remaining soy sauce together in a bowl. Set aside.Tofu:1) Drain Tofu and wrap it in several layers of paper towels.2) Gently press the tofu with your hands or against the counter top to release the liquid. 3) Slice the block into pieces about 1/2 an inch thick for even distribution of crispiness and dice it further for your preferences, however, the smaller the cubes, the more difficult it can be to turn over. Set aside.5) If you are using a non-stick pan heat it slightly on medium-high heat (about 30 seconds) before adding oil.6) If you are using a cast iron pan, please heat for about 1 minute to 1 1/2 minutes on medium-high heat. 7) Add oil to heated pan and gently spread over the surface of the pan.9) Set the tofu pieces in the pan, leaving ample room between them. They should sizzle when placed in the oil. 10) Sprinkle the tops with salt and a little cayenne pepper.11) Now, the MOST IMPORTANT step is -- LEAVE THEM ALONE for about 6 or 7 minutes. Just gently shake them to make sure they don't stick to the pan. Do NOT turn them or agitate them in any other way. When you see a golden crust beginning to creep its way up the sides of the slices, turn them and spice the other side. Add more oil if the pan seems too dry.11) The second side will only take about 4 minutes to cook.12) When they are evenly browned take them out of the pan and place them on paper towels to drain.Stir Fry:1) Use the same pan as was used for the tofu. Turn the heat to medium-high. Add more oil to the pan if needed. 2) Add the garlic, ginger and scallions. Stir-fry for 20 to 30 seconds until fragrant. 3) Stir in the broccoli and carrots. Toss together for a minute, 4) Add the tofu and rice. Cook, scooping up the rice and pressing it back down into the pan, for a minute or two until the rice is hot. 5) Add the egg and soy sauce mixture and the basil. Continue to stir and toss until the egg is cooked, about one minute. Remove from the heat, and serve.Makes about 4-6 servings.**Note: an alternative method of cooking the eggs is to scramble them and then add the rice. To do this, do not mix the soy sauce with the beaten eggs and stir fry only the carrots and broccoli as mentioned above and remove from skillet. Once the vegetables are done cooking, cook the garlic, scallions and ginger as mentioned above and scramble the beaten egg quickly. When the egg is almost cooked, stir in the cooked rice. Stir and turn the rice quickly, allowing the egg to stick to it. Then add the cooked vegetables, tofu and soy sauce to the pan and cook until the rice is hot.
