- About half a cup of shredded lettuce (I used iceberg)
- 2 eggs, to be cooked like an omelette

Here is how you make My Veggie Rice Paper Rolls:

Slice all veggies the same way. In this case I sliced everything lengthways. Next, whisk your two eggs together and put them into a heated frying pan with about a teaspoon or so of oil- fry it like you would an omelette.Next, you need to wet the rice paper (wet it as you use it!) so it becomes pliable, but don't let it stick to itself or you'll be trying to unstick it for ages! Then, place paper on chopping board, and begin to assemble your veggies and eggs.Then, once you have done that, roll over once, fold in the sides and continue rolling until it is completely rolled and has come together.
