As a note, this isn't very spicy but you can certainly make it that way. The original recipe calls for much less rice so it would be more like a soup, but I like it this way much better. The rice soaks up all the broth and flavoring and makes for a much better meal.

4 garlic cloves, sliced
2 Tbsp vegetable oil
6 c. vegetable broth/stock (I use organic or make my own)
3 zucchini, cubed
1 Tbsp cumin
1 Tbsp chili powder
2 c. rice, uncooked


How Do I Make Spicy Zucchini and Rice?

Here is how you make Spicy Zucchini and Rice:

Heat the vegetable oil in a stock pot over medium heat. Slice the garlic and cook in oil until soft (just a couple minutes). Add the cumin and chili powder and allow to cook another couple minutes. Add the vegetable broth/stock, zucchini and rice. Place a lid on the pot and allow to cook until rice is done; about 15-20 minutes.
