1.5 cups cottage cheese (blended smooth)
1 tbsp fresh thyme
1/2 tsp salt
1/2 tsp pepper
1/4 cup grated Parmesan cheese
1 egg


How Do I Make Fresh Thyme and Ricotta Ravioli?

Here is how you make Fresh Thyme and Ricotta Ravioli:

Blend up your cottage cheese. It should be about the consistency of ricotta. You might want to drain off some liquid before blending. Stir in the thyme, salt, pepper, and Parmesan. Beat the egg and stir it into the mixture. Lay a wonton wrapper on the work surface. Drop one tablespoon of the mixture into the center of the wrapper. Moisten the edges of the wrapper and top it with another wrapper. Press firmly around the edges to seal it. Do this with the remaining wrappers. Heat a deep skillet or large pot of water to a boil. Add 2 tbsp olive oil and a heaping tablespoon of salt to the water once it's boiling. Drop in 4 to 6 ravioli at a time, depending on the size of your pot. Let them boil until the middles are translucent and you can see your filling through them fairly well. Scoop them out using a slotted spoon and serve them immediately. If they are going to sit on a serving platter for a while, lightly coat the platter with oil to keep the ravioli from sticking to it. Top each serving of ravioli with your choice of salt.
