The ingredients for Ruz Bunni Bukhari (Brown Basmati Risotto Bukhari) are:

1.3 sprays Original PAM
1/2 large onion,chopped
3 cloves garlic
3 medium chicken breasts, no skin
1 tsp salt
1/3 tbsp ground cumin
1 tsp black pepper
1 tbsp dried coriander leaf
1/2 can Hunt's Tomato Sauce
1 can Hunt's Original Diced Tomatoes
1 cup water
2 cups brown rice, long grain (or brown basmati rice)



Note: Before making this dish, if you prefer doing it with white rice make sure you get white basmati rice. Otherwise, if you have the patience to wait 50-60 minutes for the brown rice to cook, you can try to soak the rice beforehand overnight, after washing it.



How Do I Make Ruz Bunni Bukhari (Brown Basmati Risotto Bukhari)?

Here is how you make Ruz Bunni Bukhari (Brown Basmati Risotto Bukhari):

Cut the chicken into cubes. Dice onions. Spray pam in a pot. Turn on stove on high. Add onions and garlic, stir for a little bit. Add the chicken cubes, cumin, salt, pepper and coriander. Stir for 10 minutes or until there's no visible pink skin on the chicken. Keep the stove on high. Add canned tomato sauce and diced tomatoes, and before throwing the can away, fill it up with water and add that (or equivalent amount of water). Wait until it bubbles a bit. Add the rice and lower the heat to low. Cover the pot and let it simmer for 50-60 minutes. Check on it after that and see. If there's some sauce left over that wasn't absorbed in by the rice, that's OK. Just leave it for another 10-15 minutes. If the rice is not done, just add a bit more tomato-water (1/2 can mix should do it). Note: If it burns a bit at the bottom don't worry about it, just serve everything but that bottom layer (some people actually like the burnt rice at the bottom). Note: It's supposed to look a bit like risotto if you've used brown basmati rice. However, If you've used white basmati rice it should absorb the sauce entirely. Don't worry too much if it looks a bit too much like risotto. If you didn't follow the directions to the letter and it does, it still tastes good just use a bit less sauce next time.
