1/4 c butter
1/2 c chopped shallots
1/2 c sliced crimini mushrooms
2 c Arborio Rice
1/2 c dry white wine or water
2 c grapes, halved
1/3 c shredded parmesan cheese
2 t chopped fresh rosemary
salt and pepper
Italian parsley or additional rosemary for garnish

How Do I Make Santorini Risotto?

Here is how you make Santorini Risotto:

Heat broth to boiling in a saucepan; reduce heat to a simmer. Melt butter in a large nonstick pan over medium-high heat. Add shallots and mushrooms and saute for 3-4 minutes or until tender. Stir in rice and cook for 2 minutes. Add wine and cook until wine is reduced by half, about 2 minutes. Reduce heat to medium-low. Add hot broth 1 cup at a time, stirring occasionally, until broth is absorbed, about 20-25 minutes. Add grapes, Parmesan and rosemary for the last 5 minutes of cooking time.
