4 medium shallots
200g fresh shelled broad beans or frozen soya beans
3 spring onions trimmed/1 clove garlic
350g Carnaroli/Arboria Rice
250g French Beans
1.3 ltrs chicken stock/100ml white wine
100g parmesan finely grated
140g shelled peas or frozen peas
1 tbsp olive oil and 85g butter or use 2 tbsp olive oil


How Do I Make RISOTTO PRIMAVERA?

Here is how you make RISOTTO PRIMAVERA:

? For fresh broad beans drop them in boiling water for 1 minute, drain, cool and peel skins. If frozen, allow to thaw and peel. Frozen soya beans can be added directly.? Chop the garlic, shallots and spring onions finely. Slice the French beans into bite sized pieces? Put the stock into a separate pan and bring to a simmer.? Heat the oil and butter (if using) in a heavy based pan and soften the shallots etc for 3-4 mins. Add the rice and keep it moving so it is coated in the oil.? When the rice is hot pour in the wine and allow it to evaporate? Put timer on for 20 mins. It takes 18-20 minutes to add the stock.? Add 1 ? ladles of stock and let it simmer gently but not boil. Keep stirring until all the liquid has been absorbed. Continue stirring and adding the stock.? After 14 minutes add the broad beans and peas to the rice with some seasoning.? At the same time add the French beans to the remaining stock and simmer for 2 mins, depending of the size of the pieces Remove from stock and add to the rice? Start tasting the rice. It is done when it has softened but has a bite in the centre and the risotto is creamy. If you add too much stock you won?t get a creamy consistency.? Remove pan from heat. Add a splash of stock, the rest of the olive oil or butter (if using) and the parmesan cheese.
