Chop up carrots, celery, potato, and onions and satuee in one can of chicken stock in a non-stick pan until tender. Cut the fat off the roast and chopped into pieces. Brown the meat in a sprayed (non-fat cooking spray) pan, and season to taste. Combine all the ingredients and put them in a 2 quart casserole dish.
