How Do I Make Mom's Pot Roast?

Here is how you make Mom's Pot Roast:

Pre-heat oven to 400 degrees. Chop up carrots, celery, potato, and onions and satuee in one can of chicken stock in a non-stick pan until tender. Cut the fat off the roast and chopped into pieces. Brown the meat in a sprayed (non-fat cooking spray) pan, and season to taste. Combine all the ingredients and put them in a 2 quart casserole dish. Cook covered an hour and then uncover and continue cooking until meat is done and tender (approx. 30 minutes). Makes 8 - 3 oz servings of pot roast and at least 8 - 1/2 cup servings of vegetables.
