Here is how you make OLSEN - Poor Man's Pot Roast:

1) Add all "Pot Roast" Ingredients into large mixing bowl. Adjust amount of egg and bread crumbs as needed to achieve desired consistency as you blend and knead ingredients into a meat loaf style mixture.2) Form mixture into 4 large equal sized patties, making sure each is between 3/4" and 1" thick.3) Place in covered baking dish (coated with cooking spray), large enough to lay all 4 patties flat on the bottom without overlapping.4) Throw in cut carrots, celery, and onion on top of patties, and pour 2 cans of condensed soup over top of vegetables and patties, mixing roughly and making sure patties are covered.5) Cover and bake in oven for approximately 1 Hour to 1 our and 15 minutes, at 375 Degrees, or until vegetables are all fully cooked.6) While that is baking, boil cut potatoes for approximately 15 minutes, drain and remove to mixing bowl. Use an electric mixer to mash potatoes and once mashed thoroughly, add fat free half and half slowly, while mixing until desired creaminess is achieved. Add salt and pepper to taste and add fat free liquid butter to taste.7) Serve "Pot Roast", vegetables and gravy over a bed of mashed potatoes.Serving Size:?4 Servings, One Patty Each, Plus Potatoes and Vegetables
