1 large head of cauliflower, leaves and stems removed, broken into medium to large florets
1 medium onion, cut into quarters
4 cloves garlic
1 tablespoon olive oil

1/2 cup instant mashed potato, unprepared
1/4 cup sour cream
1 packet Herb-Ox Sodium-Free Chicken-Flavored Seasoning
Water (optional)
2 tablespoons chives

(note: for this recipe, I like to use the orange-colored cauliflower)


How Do I Make Roasted Cauliflower Mash?

Here is how you make Roasted Cauliflower Mash:

Makes about 3 hearty 1-cup servings. Heat oven to 400deg. Place vegetables in non-stick baking dish that has been coated with cooking spray. Drizzle veggies with olive oil and toss with fingers to distribute. Roast vegetables until tender (about an hour). Note: you may need to remove the onions and garlic earlier, as they roast faster. If so, put in small bowl, cover, and set aside until ready to use.Remove from oven, and allow to cool slightly. Place vegetables in food process and process until smooth. Add Herb-Ox Chicken Seasoning, dehydrated mashed potatoes, sour cream and chives. Mix with rubber spatula to distribute. Let stand for a minute or so. Process again until smooth, 2-3 minutes.
