1/4 cup of roasted Pepitas (pumpkin seeds)
1/4 cup dried currants
2 Tbs gorgonzola or blue cheese crumbles
1 Tbs real bacon bits
4 Tbs croutons

Dressing:
1 Tbs olive oil
1 tsp balsamic vinegar
salt and pepper to taste

Here is how you make Kimberley's Scrumptious All-in-One Salad:

Wash head of lettuce thoroughly. Combine several varieties if you like. I spin mine dry in a salad spinner, This is a wonderful addition to your kitchen if you don't own one.Put in a very large bowl. Add the pepitas, crumbled cheese, currants and bacon bits. I get both the pepitas and dried currants at Vitamin Cottage (Natural Grocers) at a great price. Mix together well. In another small bowl, mix together the oil, balsamic vinegar (make sure it is Balsamic), salt and pepper. Grind fresh if you can. Still vigorously until well emulsified and pour onto the salad.
