This makes one big plate of salad... so you can use it as a side dish, eat it all yourself, double/triple the recipe and feed more people.. super yummy!1. Grill chicken (I usually do this the night before... we will grill something else and just put the chicken on. The chicken is great cold in the salad).2. Take a small frying pan and spray it with Pam or another nonfat, non calorie cooking spray... place onions in the pan and cook until browned (cooking the onions is amazing. It changed the whole flavor of the salad).3. Chop all the veggies and chicken and toss together for salad. Add dressing.** I usually slice my cucumber the night before and put it in tuberware.
