These yummy meatballs look and taste great and are loved by kids and adults alike. The recipe is from Jean Pare's cookbook (minus the salt) and I have been making these for years as my husband loves to fish. We use home canned Coho, but any red salmon will do. Serve with a crisp green salad and whole grain buns to sop up any extra sauce.

The ingredients for Salmon Meatballs are:

15 oz. Canned salmon (preferably red)
1/2 cup long grain white rice
1/2 cup grated carrot
1/2 cup finely chopped white onion
1 egg
1/2 tsp. salt (if desired, I omitted)
1/4 tsp black pepper
1 10 oz. can cream of mushroom soup (or cream of celery is very good too)
3/4 cup water


How Do I Make Salmon Meatballs?

Here is how you make Salmon Meatballs:

Put salmon and juice into a medium sized bowl. Remove any skin and bones. Add all other ingredients except soup and water. Mix well and form into 15 large meatballs (make smaller if using as an appy) Place into a Pam sprayed large casserole, allowing room around each ball for expansion.Mix soup and water together and pour over top of all. Put on lid and place into a 350 degree oven for 45-60 minutes. Makes 5 servings of 3 meatballs each.
