0.5 c. chopped onions
2 eggs
1/2 box of Jiffy cornbread mix
1 Tbsp. extra virgin olive oil


How Do I Make Salmon Patties?

Here is how you make Salmon Patties:

Drain salmon and remove any bones and skin. Mix salmon, eggs and onions. Form into patties. Place the Jiffy cornbread mix into a large ziploc bag. Place, one patty at a time, inside, seal and shake to coat. Remove from bag and place on a plate. Continue coating the remaining patties. Heat EVOO in a skillet over medium high heat. When heated, carefully place coated patties side by side without touching. Cook about 5 minutes on each side, or until done. Carefully remove from the heat, and pat with paper towels to remove excess oil.
