6-8 mushrooms, cleaned and chopped
1/2 yellow onion, chopped
1 Tbsp canola oil
1 14-oz frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese

1 box of 14 manicotti shells, cooked and drained

Sauce:1. In a small saucepan, heat the butter over medium heat until bubbly. Add the flour and minced garlic, cooking and stirring constantly for 1 minute.2. Reduce heat to simmer and gradually add the milk and the broth.3. Cook and stir until smooth.4. Add the seasonings to taste. 5. Continue cooking, stirring occasionally, until mixture is thickened, 8-10 minutes.Preheat over to 350 degrees.Filling:1. While the sauce is cooking, saute the mushrooms, chopped onions, and another clove or two of minced garlic in 1 tablespoon of canola oil. Season to taste with pepper and salt free seasoning. Transfer the mixture to a large bowl. 2. Brown the meat in the same pan; drain if needed and add to the mushroom mixture.3. Add the drained spinach. Mix well.4.
