-1 Tbsp butter
-2 Tbsp olive oil
-3 shallots, finely chopped. Onions may be substituted; use approximately 3 tablespoons of onion.
-3 tsp cornstarch
-2 cups of chicken broth
-1/2 cup white wine
-3 Tbsp Dijon mustard (ie, Grey Poupon)
-1 tsp creamed horseradish (optional- it adds a little kick)
-1 tsp dried tarragon
-Salt and pepper to taste- I recommend at least a teaspoon of sea or kosher salt.


How Do I Make Savory Mustard Sauce?

Here is how you make Savory Mustard Sauce:

In a small saucepan over medium high heat, melt the butter and 1 Tbsp of the olive oil together. Add the chopped shallots and cook until translucent.Add the white wine and tarragon and boil down approximately halfway (about a minute, as wine is quick to evaporate), then add one cup of the broth and bring back to a boil.In a separate bowl or measuring cup with a pouring spout, whisk together the remaining broth, the remaining Tbsp of olive oil, the cornstarch, the mustard, and the horseradish. It's very important that the cornstarch be thoroughly dissolved.Add the mixture (which is called a roux, by the way) to the boiling wine and broth, but do it carefully- pour slowly and stir the pot constantly, or you will wind up with lumps as the cornstarch is boiled into noodles! Add salt and pepper, and continue to stir occasionally until the sauce thickens to your tastes. Remember it will continue to thicken slightly once removed from the heat.
