1.Slice eggplant into 1/2" slices and sprinkle with salt. Let water pull out of them while you cook the chicken. 2. Cook ground chicken in 1/2 Tbsp olive oil until browned. Drain and set aside.3. Wipe the eggplant down. In a small bowl crack one egg and scramble. In a separate bowl mix the parmesan cheese and some Italian Seasonings. Set up an assembly line and dip the eggplant in the egg, parmesan and set on a baking sheet. Bake at 425F for 10 minutes on each side. 4. While the eggplant is baking heat the remaining olive oil in a skillet and cook the onion, pepper and garlic until soft. Add a can of tomato sauce and the alfredo sauce. Toss in the diced tomato, salt and seasonings to taste, and cooked chicken. Simmer for at least 10 minutes. 5.
