Roast the red peppers in your oven prepared to hi broil. The skins should char. Place the warm peppers in a large ziploc bag and place in fridge to cool for 30 minutes. Once the peppers have cooled the skins will peel of easily. Peel the red peppers. Chop the peppers roughly and the mushroms.In a saucepan over medium heat, warm the oil. Add the garlic and chopped peppers and mushrooms. Cover and cook, stirring occasionally, until the peppers look silky and the flavors have blended, about 10 minutes.Transfer the mixture to a blender or food processor and whirl until very smooth. Add a tablespoon or two of olive oil, if necessary, to achieve a very smooth texture.You can add your favorite Italian herbs and seasonings to taste.Warm, gently, if necessary.
