2 slices thick-cut bacon, diced
1/2 lb ground turkey
1 medium lg. onion, diced small
6 lg. savoy cabbage leaves
1/2 c. brown rice
1 lg. egg, beaten
1 can (14 oz) crushed tomatoes
1 Tbs Worcestershire sauce (I like Lea & Perrin's)
1 Tbs brown sugar
2 cloves garlic, chopped rough
Olive or vegetable oil
Water
Salt and Pepper


How Do I Make Cabbage Rolls in Tomato Sauce?

Here is how you make Cabbage Rolls in Tomato Sauce:

Cook rice and set aside.Boil cabbage leaves for 2 min, quench in cold water. Cut out large, inflexible portion of stem. Set leaves aside.In a heavy-bottomed saucepan with a lid, brown half the onion and the garlic in a few Tbs of oil. When the onion is well-caramelized, add in the ground turkey and brown thoroughly. Season w/salt and pepper. Set aside. Cook bacon until fat is rendered. Drain and set aside, leaving bacon drippings in pan.Add remaining onion to the pan and cook onions until slightly browned. Add crushed tomatoes, Worcestershire sauce, and brown sugar to pan. Cook down at a hard simmer for 5 min, then season to taste w/salt and pepper, reduce heat to low and cover.In a bowl, mix the cooked rice, meat, onions, and bacon together. Stir in the egg. Season w/salt and pepper to taste. Place about 2-3 tablespoons (give or take) into the center of a cabbage leaf and roll it up, tucking in the ends. Stick a toothpick through the cabbage roll at an angle to hold it together. Repeat until you have a half-dozen nice fat cabbage rolls. Put the rolls seam side down in the tomato sauce, and baste them with the sauce. Cook the cabbage rolls in the tomato sauce, covered, at a low, bare simmer for 45 min.
