Here is how you make Polenta with Tomato Sauce:

Make the polenta:Boil 4 cups of water and 1 teaspoon of salt in a large pot. Turn down the heat and gradually whisk in the cornmeal. Cook for an hour at a bare simmer, stirring very often. At the end of cooking, stir in the oil or butter and 1/2 cup grated cheese.Meanwhile, make the sauce:Heat the 1/4 cup olive oil in a pan and gently soften the finely chopped onion. Stir in the finely chopped garlic, stir, then immediately add the chopped tomatoes and juices. Add a pinch of cayenne or hot pepper sauce, salt and pepper to taste. Simmer very low until the polenta is cooked.In a low sided baking dish, layer polenta with grated cheese and tomato sauce. Use more cheese, including mozzarella, if wished.
