Cool and set aside.In a large boiling pot, fill water half-way and heat to a boil.Carefully cut off 8 whole leaves from the cabbage, and immerse them in the boiling water until just softened and plyable. Carefully remove, and rinse gently under cold water. Lay out on a fresh clean cooking towel to drain.In a large non-stick skillet, in 1 teaspoon olive oil, brown the sausage patties, and break them up into little pieces as they cook. Add the onion, raisins and sun dried tomato pieces, and the oregano. Stir well, until cooked through. Add the 1 cup of pre- cooked brown rice, Stir well and heat through again, then set aside to cool.Open the can of crushed or pureed tomatoes, and add 1/4 teaspoon of salt. Stir well.Assembly:Pre-heat oven to 350 degrees.In a 13 x 9 inch pyrex baking pan, pour 2/3 of the can tomatoes into the pan.On a large clean dry cutting board, assemble the cabbage rolls one at a time. Take one roll, and place 1/8 of the filling in the center. Roll the cabbage leaf around the filling from the thickest side of the cabbage leaf so that the broader, thinner part of the leaf overlaps the edge. Place edge side down in the tomatoes in the pyrex.Continue with the remaining leaves and fillings, until the pyrex is filled with 8 servings.Pour the remaining tomatoes over the cabbage rolls.
