Here is how you make Healthy Sausage Tortada:

Spray one side of pita with Pam or I can't believe it's not butter! spray. Lay on med heated skillet. Cook and chop chicken/sausage patty into cubes. Sprinkle cumin and cream of tartar on chicken, to taste. Once pita is browned on down side (3-5 minutes), use a spatula to flip it, and move chicken to one fourth of pita. Top with pico and lettuce. When browned, fold pita into half the long way, and again the short way to make a pocket quesadilla. Set back on skillet for a minute or so and serve with sour cream or hot sauce!
