1 package Jennie-O Turkey Italian sausage, removed from casings and crumbled
2 large onions, halved and thinly sliced (or chopped)
1 bunch (1 1/2 pounds) kale, thick stems removed
4 clove(s) garlic, minced
Salt and Pepper
9 lasagna noodles, each broken into 6 to 8 pieces
1 pint cherry or grape tomatoes, quartered
3 cups part-skim ricotta cheese
1/2 cup finely grated Parmesan cheese


How Do I Make Sausage and Kale Lasagna?

Here is how you make Sausage and Kale Lasagna:

Notes: On steps 5 and 7, you're supposed to just put the kale in a pot and steam/saute it for a while. Afterwards, you're supposed to then chop it, but I found that this made it challenging, since the kale was pretty hot coming straight out of the pot. I assume that you could easily pre-chop the kale before putting it into the pot, which might actually help since it was difficult to toss the kale the first few times, anyway.1. In a large pot with a lid, brown sausage. Meanwhile, preheat oven to 400 degrees.2. Stir in onions, then cover the pot and reduce heat to medium-low. Let simmer until onions are softened (this is entirely subjective), stirring occasionally. This seemed to take a lot longer than I had expected.3. Uncover, then add garlic and continue cooking for 2 to 3 minutes.4. With a slotted spoon, drain the mixture and transfer to a very large bowl.5. Add kale and 1/2 cup of water to the pot. Season with salt and pepper, then cover and cook over medium-low heat - tossing occasionally - until tender (again, subjective).6. Begin cooking lasagna noodles. Cook for 2 minutes less than the directions on the package suggest. When done, drain and pour noodles into bowl with sausage/onion mixture.7. When done, remove kale from pot and coarsely chop. Put chopped kale into bowl with noodle/sausage/onion mixture.8. Add tomatoes, ricotta, 1 1/2 teaspoons of salt and 1/2 teaspoon pepper to the bowl, then mix well.9. Place mixture into 9 x 13 baking pan, smooth with a spatula and top with parmesan.
