1/2 green bellpepper
1/2 loaf french bread
1/2 cup bread crumbs
1/4 cup liquid egg whites
1/2 T olive oil

Seasonings: Salt, Pepper, Oregano, Sage, fresh Parsley, 1/3 cup green onion

1. Peel Eggplant....small dice....place in collinder with salt to tenderize and season2. chop onion/bell pepper...sautee in 1/2 T olive oil3. Add eggplant to the rest of veggies and sautee until tender4. Add rough chopped raw shrimp and seasonings to mixture5. Add french bread (torn into small pieces and pre soaked in chicken stock) to mixture....cook on med heat until stuffing starts to brown6. Take of heat and add egg white and bread crumbs7.
