What Are The Ingredients For Florentine Shrimp Recipe?

The ingredients for Florentine Shrimp are:

1 pound peeled cooked shrimp (tail on or off is ok)
2 tsp. minced garlic
1 cup 98% FF chicken broth or stock
8 oz. Neufchatel (lowfat) cream cheese
10 oz. frozen chopped spinach, thawed and squeezed dry
Dash of nutmeg
1 cup shredded asiago or parmesan cheese


How Do I Make Florentine Shrimp?

Here is how you make Florentine Shrimp:

Nutrition calculation is for 8 servings. I usually have 'one' serving and my son has 4 :)8 oz. cooked fettuccine (not included in nutritional calculation)16 oz. cooked shrimp (Doesn't matter what size shrimp (I like the biggest ones) how you cook em (I just saute them in a pan with Pam), or if you thaw them from frozen/cooked)Finely mince 2 cloves of garlic and briefly saute in one cup of FF chicken stock. Add an 8 oz block of neufchatel (lowfat cream cheese) to the pan and melt over low heat. Whisk until combined. Add a 10 oz. package of frozen chopped spinach, (thawed, liquid squeezed out) to the pan and gently combine. Add a dash of nutmeg, if you like, and salt/pepper to taste. Sprinkle up to 1 cup of grated asiago (or parm) cheese into the pan and gently heat til it bubbles slightly.To serve individually, swirl a portion of fettuccine into a mound in the center of a pasta bowl. Top with 1/2 cup of the spinach sauce and top with shrimp.To serve 'family style', place the shrimp onto the cheese/spinach mixture and allow to heat through. Serve with fettuccine.To serve in a hurry, skip the fettuccine, use Rotini and dump it all into a big dish :) It still tastes good... just isn't as refined in presentation :)Number of Servings: 8Recipe submitted by SparkPeople user MILEHIGHMAMA.
