Peel and devein 1 lb shrimp, set aside. In 12-inch skillet over medium-high heat, heat oil until just at smoking then add chopped onion. Saute until tender and just brown at edges, 5 minutes. Add garlic, basil, and oregano, stir and saute until fragrant, about 30 seconds. Add tomatoes all at once, making sure to deglaze the pan of any browned bits. Cook tomatoes for 5 minutes until slightly thickened and reduced. Add shrimp, stir gently, cover, and let cook at low heat until shrimp is pink throughout, about 5 minutes.
