The ingredients for Ken's Greek shrimp, tomatoes, cucumber, artichokes are:

1 Pound of raw shrimp, peeled
4 tbsp of KC Masterpiece lemon pepper marinade
juice of 2 medium lemons
5 tbsp of virgin olive oil
1/2 onion (any color you like, brown used in this one)
8 to 12 cloves of peeled garlic, minced
6 Roma tomatoes, chopped coarsely
2 medium cucumbers, chopped coarsely
1 can of artichoke hearts ( ~14 oz), chopped coarsley
2 tbsp of oregano (ground or double if fresh)
2 tbsp of basil (ground or double if fresh)
2 tbsp fresh dill ( to your taste)
1 6oz can Contadina Tomato paste ( Roma style preferred)
4 oz Contadina Tomato sauce ( Roma style preferred)
4 or more oz of crumbled Feta cheese
4 cups final yield of wild rice
4 oz white wine

Here is how you make Ken's Greek shrimp, tomatoes, cucumber, artichokes:

Makes 8 to 10 servings depending on how hungry the group is. There are no real secrets in making this great tasting lunch or dinner.Put the peeled shrimp in a zip lock bag & add the Lemon pepper marinade, plus juice of 2 lemons. Slosh the bag around so the shrimp are covered with the marinade. Roll up the bag to get the air out, pull the zipper closed and put in fridge.Best to start with soaking the wild rice in warm water to rinse before steaming it, 20 minutes for the rinse and a little stirring should do it, longer is OK too. Strain the rice through a sieve when it's done with the rinse. Start the rice steaming and it should be ready when the shrimp are.Coarsely chop the onion & mince the garlic and set aside in a bowl. Coarsely chop the tomatoes then put the olive oil in your pan or pot. I use a 9 inch electric sauce pan and it gets filled to the top. Let the oil heat for about a minute then add the onion & garlic. Let that heat up for about 5 minutes. I keep the heat on medium, roughly 200 degrees all the way through. Add the chopped Roma tomatoes to the pan and stir them in. Stir in the oregano, basil, and dill. Add the tomato paste & tomato sauce & the white wine at this time too.Simmer for 10 minutes then add the cucumber chunks. Simmer for 5 minutes and add the coarsely chopped artichoke hearts. Simmer for another 5 minutes then add the shrimp and stir until they just start to turn pink.
