3 TBS fresh thyme, finely chopped

Here is how you make Spanish-style Grilled Shrimp:

Combine olive oil, paprika, garlic and thyme in a small bowl. Peel and devein shrimp. In larger bowl, combine marinade with shrimp. Set aside for 30 minutes, covered, at room temperature. Soak 8-10 wooden skewers in water for 30 minutes as well.Pre-heat gas grill to medium high. Remove skewers from water. Thread 5 to 6 shrimps on each skewer in a "C" formation, making sure you get the tail and the body on the skewer. Place on platter. Once all the shrimp are threaded, lightly season with salt and ground black pepper.Discard any remaining marinade.Cook on medium-high for 1.5-2 minutes per side, or until shrimp are no longer translucent.
