1 corn tortilla (about 6" diameter)

Makes 1 serving - recipe easily multiplied.Hot Pepper AioliSeed and mince hot pepper.Add to mayo and set asideShrimp Mixture:- Heat a skillet and add 1 tsp. olive oil.-- Add frozen corn, and saute until defrosted, about 2 minutes.- Add garlic and onion, saute until onion is clear and soft, 2-3 minutes- Lower heat, add additional 1 tsp olive oil and then add chopped shrimp and cilantro. Saute for 2-3 minutes, until shrimp is heated through.When shrimp mixture is almost done, warm up the tortilla. Heat a second skillet, and place the tortilla in it. Flip after about a minute and heat other side.To Assemble:Place tortilla on plate.
