Collards, 10 cup, chopped
Gimme Lean Sausage Style, 14 oz (or other vegetarian sausage)
Diced Tomatoes with green chilies, 1 can
Vegetable Broth, 2 cup (or 6 - 8 if uncooked peas)
Brown Rice, 4 cups cooked
Thyme, ground, 2 tsp
Cayenne pepper, dash or to taste
Salt & Pepper to taste
Hot Sauce for passing at table


How Do I Make Vegetarian Hopping John (Slow Cooker)?

Here is how you make Vegetarian Hopping John (Slow Cooker):

Heat the oil in a skillet and cook the onion, celery, and red pepper until softened. Add the garlic and thyme and stir to mix flavors. Transfer to slow cooker. In same skillet brown the sausage and set aside. Add the stock and peas to the cooker. If using dried peas cover and cook until peas are soft, about 2 hours on high or 4 on low. If using canned or cooked peas add in the tomatoes and collards, season with salt and pepper, cover and cook on low 4-6 hours.If using pre-cooked or canned peas add the sausage and rice about 15-30 minutes before serving. Adjust the seasonings and serve.If using dried peas add the collards about half-way thru the cooking time (2 hours before serving if on high, 4 if on low). Add the tomatoes, salt & pepper when adding the rice & sausage about 30 minutes before serving.
