cook bacon until crisp, then set aside. Remove all but about 2 tbsp. bacon fat from pan. in remaining bacon fat, saut? onion and carrots until onion is translucent. add garlic, cumin, and chipotle and saut? about 30 second. add black beans and enough water to cover the beans by about an inch. bring to a boil, then simmer for 2.5-3 hours until bean are tender. add salt and pepper to taste in the last 20 minutes of cooking.
