Here is how you make Vegetarian Bean Soup:

In a large pot:Heat olive oil and saute onion, garlic, celery, and carrots together for 2 or 3 minutes.Add the 2 cans of navy beans, can of tomatoes, salt, thyme, marjoram, lemon juice, V8 and water.Heat to a boil and simmer for about 30 minutes or until carrots start to soften.Add the frozen peas and corn reheat to boiling and simmer for about 10 minutes. It is easy to add any other vegetables that you would like. Left over green beans or other vegetable you like. I have added cabbage and pieces of squash.
