Onions, raw, .75 cup, chopped
Carrots, raw, 4 cup, chopped
Celery, raw, 1 stalk, large (11"-12" long)
Curry powder, .25 tsp
Ginger, ground, .25 tsp
Nutmeg, ground, .25 tsp
Cinnamon, ground, .25 tsp
Salt, .25 tsp

Chicken Broth, 3 cup (8 fl oz)

How Do I Make Carrot Soup?

Here is how you make Carrot Soup:

Chop the onions, celery, and carrots. Saute in saucepan in olive oil for about 5 minutes. Add spices (if you have fresh ginger, you can use that. You may need a little bit more than the ground) and broth. Add bay leaves. Bring to boil. Cover and simmer for 1 hour. Take out bay leaves. Place all ingredients in food processor (may need to do in batches) until smooth. Return to pan and stir well. * Recipe was adapted from Cooking Light "Carrot and Ginger Soup". They use potatoes, green onion and cloves. I didn't have those items, plus I wanted to make it even healthier so I cut out the potatoes.
