Use pulse to ensure the vegetables are chopped finely but not pureed. The celery can be put in the food processor as well, but make sure you start with fairly small pieces. Put in large stock pot with the ham stock and the ham. Cover and heat on high until boiling. Reduce heat to simmer. Meanwhile, bring 8 cups water to boiling in pressure cooker. Add 3 cups split peas. Return to boil, stir and place lid and pressure valve on. Heat on high until valve starts rocking. Lower heat and maintain rocking motion for 3 or 4 minutes. Remove from heat and wait for pressure to go down. Careful, do not remove valve until it is cool enough that steam is no longer released or you may get burned.When pressure cooker is cool enough, remove lid and put cooked peas in with ham mixture. Stir immediately.Repeat with remaining split peas and another 8 cups of water.After adding the second batch of cooked peas, simmer soup another 10 minutes stirring frequently to prevent sticking. Add another few cups of water if the soup is too thick.COOK'S NOTE:The serving sizes shown are hearty 1 ? cup servings. Good for a meal of soup loaded with nutrients, low calories, high fibre and low fat. Careful of the salt though for those on salt restricted diets. Freezes well.
