(Adobo is measured because it contains salt and sugar. All other seasoning is adjusted to taste.)Note: I used up old potatoes with this recipe, so any potato type would be fine, but the sweet potato is needed for flavor.

2 tbsp vegetable oil
2 bay leaves
1.5 tbsp adobo
1 tsp chipotle chili powder
.25 tsp ground cumin
1 tbsp dried oregano
1 tbsp dried taragon
.25 tsp black pepper
.25 tsp red pepper flakes

1 tsp cider vinegar
10 cups water

Here is how you make Spicy and Sweet - Potato, Squash, and Kale Soup:

Throughout, have the slow cooker set to high and covered. Stir occasionally.- Chop the onion and place it and the oil in the slow cooker- Assemble veggies and chop everything EXCEPT the green onion and kale (these get added at the end so they don't cook for ages)- Add all the chopped veggies and seasoning to the slow cooker. Stir so everything gets lightly coated with the oil and let it heat for at least 30min- Then add the water and vinegar, cover, continue cooking- After it's cooked a little while, taste the broth and adjust seasoning as desired - In a few hours all the veggies should be tender- Now add the kale and green onion, cover and turn off the heatServing Size: Serving size about 3 cups, makes 8 servings (6 quart slow cooker = 24 cups, or 8 servings)Number of Servings: 8Recipe submitted by SparkPeople user DUGESIA.
