PREPARATION - - - - - - -Peel and chop onion, carrots, and celery to medium dice.Thoroughly scrub potatoes and dice (about 1/2 inch cubes).Cut tilapia fillets into pieces (I split each lengthwise and then cut the thin half into quarters - thick half into sixths).COOKING - - - - - - Place all ingredients except tilapia into soup pot over medium-high heat. Brings to boil and reduce heat to medium-low (maintain low simmer). Cook for 30 minutes. Turn off heat and add tilapia, turning ingredients to submerge fish.
