1 Yellow Squash
1 Small Onion
1 Cup Baby Carrots
2 Table Spoons Minced Garlic
1 Rib of Celery
6 cups of water

How Do I Make Vegetable Meatball Soup?

Here is how you make Vegetable Meatball Soup:

put chicken broth on to boil while you make the meatballsTo make the meatballs combine seasonings, meat, uncooked rice an egg in a mixing bowl. Then roll into 1 inch meatballs. Once broth is boiling use a spoon and slowly add one meat ball at a time. Allow to boil 45 minutes. Meanwhile, slice and chop all vegetables. Heat oil in a nonstick skillet and saute onions and garlic. Once onions are soft add carrots, wait 5 minutes and add potatos. Continue to saute for an additonal 10 minutes then add the remaining vegetables. After meatballs have boiled for 45 minutes, add vegetable mixture, reduce heat and simmer until rice is completely tender in the meatballs. Serve and enjoy.For a lower sodium version, dice jalepenos and use them to season meatballs instead of the Creole Seasoning.
