Heat 1 tbs olive oil in bottom of big pan. Add chopped Zucc, carrots, celery, mushrooms, onions, garlic, seasonings, and tomatoes. I usually chop and add while it is cooking. When done add boullion and let sit for about 3 minutes. Stir often. Add 10 cups of water and let simmer for about 20 minutes. Makes about 7 - 2 cup servings.
