Here is how you make Southwest Strata:

In a cast iron skillet (or other oven safe skillet) brown sausage. Add in onion and bell pepper & saute until soft. Stir in tomatoes & green chilies. Simmer 10 minutes. Whisk together eggs, cream, salt and pepper as desired. Stir in cheese. Pour over the meat. Cook on stove top until edges of egg are set. Place on middle rack in broiler for 2-4 minutes.
