1 C. Corn Kernels
1 large red bell peppers, chopped
1.5 lbs. lean Ground beef
1 t. Cinnamon, ground
.25 t. cayenne
.5 t. Allspice
.5 t. Ginger, ground
.5 t. Salt
1 t. Black Pepper

1 14.5 oz. can petite diced tomatoes in juice
2/3 C. Yellow Cornmeal
1/3 C. AP Flour
1 t. Baking Powder
1 Large Egg
1/3 C. Fat Free Milk
1/3 C. Cheddar Cheese, shredded


How Do I Make Spicy Beff Cobbler?

Here is how you make Spicy Beff Cobbler:

Preheat oven to 400F.In a large pan that can go in the oven, heat olive oil over medium. Sautee onions until just tender and add corn and diced red pepper. When the pepper is tender, add the garlic and continue sauteeing until fragrant. Add ground beef and spices and brown beef completely. Pour off any excess fat in the bottom of the pan and add the diced tomatoes with the juice. Turn heat to high and biol until juice from vegetables reduces by about half.In a medium bowl, combine corn meal, flour, and baking powder. Combine milk and egg and add to dry mixture. Stir until the dry ingredients are just wet and add shredded cheese. Stir to combine. Remove pan with beef from heat and spoon corn meal batter over, making 4 mounds on top of the beef. Put entire pan in the preheated oven and cook 15-20 minutes, or until cornbread batter is cooked through.
