Here is how you make Dad's Spicy Corn Chowder:

Slice potatoes, carrots and Celery. Put in boiling water to soften. Dice onion and then cook onions, garlic and chicken in olive oil until thouroughly cooked. Drain the Veggies. In a large saucepan combine, creamed corn, jalapenos, green chiles, cajun seasoning, and half and half. Stir in the veggies and chicken mixture. Simmer on low heat for about 35-40 minutes.
