How Do I Make Spicy Jambalaya?

Here is how you make Spicy Jambalaya:

This is quick and easy. I purchase the precut packages of trinity mix (onions, celery, green bell pepper) and bell pepper mix (green, yellow and red bell pepper). Pre-cut the sausage in small bit sized chunks.Place 1/2 of the veggie mixes in a large non-stick pan with a smidgen of olive oil. Cook for about 4 minutes (until they soften and start to become transparent). Add the turkey kielbasa. Cook until the juices are released. Pre-drain the red (kidney) beans and if you like, rinse to lower the sodium content.Add the red (kidney) beans to the pan. Generously season with creole seasoning, salt and pepper. Allow to simmer for about 5 minutes. Add the brown rice (make sure it is the "minute" rice variety and 3/4 can of coconut milk. Allow the coconut milk to reduce and be absorbed into the rice.
