Here is how you make Simply Spicy's Chana Masala:

For the spice blend, roast all ingredients in a dry frypan. Remove to a grinder and process until fine. Set aside.Heat water in a heavy bottomed pan. Add bay leaves, and stir.Cook for 2 minutes. Add onion, saute (adding water as required) until golden brown in colour. Add garlic and ginger, cook, stirring, 2 - 3 minutes.Add cayenne, turmeric powder, garam masala and spice mix and fry for a minute. Add tomatoes, cook 5 minutes.Add the chickpeas, cover and cook 5-10 minutes on low.Add water as required. Remove from heat.
