480 gr. of Fresh Salmon which is alot better than frozen one ... (120 gr per servings)
1 fresh mango
Spring Mix Lettuce
4 fresh Lime (fresh pressed juice)
Olive oil
Fresh Coriander
RedHot
*** Togarashi is a japanese "sushi" seasoning... you can probably find it where they sell other similar products
*** Red Tobiko.. this is flying fish eggs, seasonned and colored .. there is many variety of this (green=wasabi, yellow, orange, etc), often used in sushis
Here this will be used for decoration
same for the dried mango

Alright so lets begin !Take that fresh salmon .. take off the skin if it still have some... take off the "fish bones" (sorry I'm a french canadian .. so hope you'll understand haha)Then slice it into 0.5 - 0.7 cm thick slicesPut this in the refrigeratorNow take the fresh mango- Take off its peel and the coreNow you should have 2 big parts and smaller parts(sides of the mango core)- ok lets make small cubes with the mangosomething like... 0.5 cm cubes - add 5 tsp of the redhot sauce or it can probably be replaced by tabasco (but if you replace it .. add less than 5tsp !!) - add 2 tbsp olive oil - you can add some togarashi if you found it - add some coriander leaves sliced alright we are almost ready** you can chop the coriander or keep the whole leaves - Put some Spring mix in the plate .. (try to make it a bit compact so it will give a lil bit more high to your ceviche) - Get the salmon slices in a bowl big enough to mix the ingredients - Add the Oil, Redhot, fresh lime juice, spicy mangos and fresh coriander leaves*Togarashi, salt and pepper (I let you judge about the proper quantity to add) - Mix everything with a spoon - Put on top os the spring mix in the plate - add a small tsp of tobiko for decoration on top of the ceviche - dried mango chunks ** you can spread some togarashi around the ceviche for decoration too you are done ! :)you can eat it like this or with bread croutons :)Number of Servings: 4Recipe submitted by SparkPeople user NEHALENNIA.
