1 can of diced tomatoes ( drained )

Here is how you make Spicy Scallops with Vegetables:

1) Combine rice and water and bring to a boil Reduce heat and simmer for 20 minutes. or until rice is tender and water has been absorbed.2) I use Bay scallops, they are smaller. Rinse and pat dry.3) In large skillet, warm oil over high heat. Add Scallops, zucchini, basil, black pepper, red pepper flakes and the cayenne pepper; Saute for 4 to 5 minutes or until scallops are opaque and zucchini are tender.4) Add can of diced tomatoes saute until tomatoes are heated through.5) Remove from heat and stir in parsley. 6) Spoon Scallop mixture over hot rice.
