1.5 lbs bulk mild Italian pork sausage
2/3 medium onion, thinly sliced
6 cups Baby Spinach, fresh
4 cups shredded low-moisture part skim mozzarella cheese

Cook pasta according to package directions until it is al dente. Drain in colander and set aside.Either in one or two batches, depending on the size of your skillet, saute in olive oil both the onion and the Italian pork sausage.
