1 tbsp. chopped basil
1/2 tsp. dried oregano
3 tbsp. evoo
1 tbsp. white wine vinegar
1 (3 pound) spaghetti squash
1 bunch spinach
1/2 cup chopped onion
2 garlic cloves, minced
1/2 cup fat free feta cheese
salt and pepper to taste

Here is how you make Spaghetti Squash with Spinach, feta, basil and white beans:

In a medium bowl combine beans, basil, oregano, i tbsp. evoo and vinegar. With a sharp knife, pierce squash in several places. microwave on high for approx. 15 minutes, turning halfway through cooking. Let stand 10 minutes before handling. Cut in half lengthwise and scrape out seeds and fibers, twist out strands of squash. In a large skillet, heat 2 tbsp. evoo, add onion, garlic. Cook for one minute. Add spinach cook until wilted. Add feta cheese and bean mixture. Cook through until heated.
