The ingredients for Coriander Spinach with Bulgur are:

2 Tbsp Extra Virgin Olive Oil
2 tsp crushed garlic
2 Cups chopped onions
1 full can (796 ml/28 oz) of Diced Tomatoes
1 full can of Tomato Paste (5.5-6 oz)
2 Tbsp Coriander
Dash of Salt
24 oz Spinach (= 3* 8 oz bags or 2 large fresh bunches)
1/2 cup dry fine bulgur


How Do I Make Coriander Spinach with Bulgur?

Here is how you make Coriander Spinach with Bulgur:

1. Chop some of the spinach, wash well & set aside to drain.2. Chop the onions & set aside.3. Crush & Fry the garlic in 2 tbsp of EVOO on med heat for about 1-2 minutes, stirring constantly.4. Add the onions to the garlic & stir another 1-2 minutes.5. Add the full cans of Diced Tomatoes & tomato paste.6. Add the Coriander & stir well. 7. Top with the chopped spinach & cover, allowing it to simmer. 8. Chop & wash the remainder of the spinach, set to drain.9. Stir the spinach that has already been cooking for a few minutes, as it should have shrunk down a bit in size. Add the remainder of the spinach as the first shrinks enough to fit more into the pot. 10. Once all the spinach is well mixed with the tomato, add 1/2 cup of dry bulgur (rinsed) & stir it in. 11. Cook another 5 minutes or until the consistency of the spinach is soft *****(tip for parents - the softer it is, the more the kids like it - spinach that is not VERY well cooked can be harder for little teeth to chew - this one is yummy enough for my 5 yr old :) )12. Serve as a side (1 cup per serving) or for a main dish, serve 2 cups (=2 servings) and top it with Fat Free Garlic Yogurt (see my other recipes) for a complete & healthy meal.Number of Servings: 8.5Recipe submitted by SparkPeople user SUZANNEY73.
