Cook spinach over low heat with a little water. Add chopped onion, flour, Parmesan cheese, seasonings and warm mild to the bread and mix lightly. Add cooked spinach and stir until well mixed but not over mixed. Cover and let sit for 30 minutes. Form into 3-inch balls. Bring a kettle of salted water to boil and place spinach balls in one by one. Cook for 20 minutes. Optional serving suggestion is to roll in melted butter then extra Parmesan cheese.
